During this two-day intensive class, you will learn all the considerations and principles of milling to produce high-quality Extra Virgin Olive Oils. This class is directed to producers considering starting their own olive oil milling operation, new or current mill owners wanting to refresh or improve their knowledge, and for anyone in the public interested in understanding the details how olive oil is made. Lectures and theory will be followed by mill visits in the region where equipment and processes will be evaluated in detail.
