Get the best knowledge available on modern, high-yield methods of producing olives for oil.

This two-day course will include presentations by research experts from the University of California and the foremost authorities in Spain.  The course includes a field visit to Corto Olive, one of the largest producers in California, where you will learn how olives are grown in the orchard and how oil is produced in a milling facility.

The course includes coffee and pastries both days, two lunches and a fine dinner.  You take home the latest editions of manuals for conventional and organic olive production as well as electronic files of course presentations.
