For the second year in a row, the UC Davis Olive Center in partnership with the California Olive Oil Council is pleased to offer sensory evaluation classes during the Paso Robles Olive Festival.

The classes have been moved to the Paso Robles Inn and split into introductory and advanced sessions in order to accommodate a larger group.  Participants are welcomed to sign up for both sessions.

Introduction to Olive Oil Sensory Evaluation; $95
9:00 am - 12:00 pm
In the introductory session, we will examine the basic methods of olive oil sensory analysis, the primary defects found in olive oil and examples of high quality extra-virgin olive oil.  There will be a tasting of a number of oils.  This session is intended for those who are new to olive oil tasting.  No prerequisites required.

Advanced Olive Oil Sensory Evaluation; $95

1:30 pm - 4:30 pm
The Advanced Class is intended for tasters who have previous experience tasting olive oil, or who have taken a previous sensory evaluation of olive oil class.  In the advanced session, we will examine quality olive oils from around the world and advanced sensory topics for those who already have a basic familiarity with olive oil tasting. There will be a number of oils tasted during the seminar.
